Nigara R2 Kiritsuke 135mm is made by one of our favorite stainless steels, R2. It is Hitachi Metals and in the hands of a good blacksmith, can offer similar sharpness and edge retention to carbon steel. R2 is very similar to a high carbon.
The inner core is covered in a multi-layer damascus softer stainless steel for added protection, ease of manufacture, and lightness. The cladding also receives a beautiful hammered tsuchime finish that adds a dramatic look to the knife.
The Nigara R2 Kiritsuke 180mm is a perfectly sized kitchen knife for chefs of all stripes who are wanting a mid-weight, mid-length tool that can pretty much tackle any ingredient with ease and style.
